Want to eat healthy but also love muffins? Me too. These delicious carrot banana chia muffins hit the spot.
I love to include at least one vegetable in my muffins and breads. It’s so easy and adds moisture to keep them soft (not to mention all the great fiber and micronutrients as well). Adding healthy ingredients to baked goods doesn’t have to make them lose their flavor! Carrots and banana add flavorful sweetness and the chia seeds and almonds take it up a notch by providing some crunch!
