I love to include at least one vegetable in my muffins and breads. It’s so easy and adds moisture to keep them soft (not to mention all the great fiber and micronutrients as well). Adding healthy ingredients to baked goods doesn’t have to make them lose their flavor! Carrots and banana add flavorful sweetness and the chia seeds and almonds take it up a notch by providing some crunch!

Bananas: are rich in fiber, potassium and magnesium, all of which have been linked to lowering the risk of heart disease
Carrots: great source of vitamin A, B vitamins and vitamin K. Carrots are linked to a reduced risk of cancer and heart disease, as well as improved eye health.
Chia Seeds: Chia seeds are high in quality protein and omega 3s, much higher than most plant foods and a great source of fiber.
Almonds: great source of magnesium, heart healthy fats and fiber.
Whole wheat white flour: great alternative to refined white flour because it has a much higher fiber content. Whole wheat white flour is still whole wheat flour, but it has a lighter color and lighter flavor that might be preferred in certain dishes and baking.
