Cream Cheese Shakshouka Egg Bake

Ingredients:

  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeño (seeded) diced
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 2 Tbsp tomato paste
  • 1 tsp cumin
  • 1/2 tsp turmeric 
  • 1 tsp smoked paprika
  • 1 large tomato, diced
  • 1 cup spinach, chopped
  • 1/4 cup cilantro
  •  4-6 eggs
  • 1/4 cup cream cheese
  • 1/4 cup feta
  • 1 tsp black pepper
  • Serve with toasted sourdough bread or pita

Directions:

  1. Preheat oven at 375.
  2. Chop onion, pepper, jalapeño, and garlic into desired size.
  3. Add olive oil to large sauté pan and let simmer. Add chopped onion, bell pepper, jalapeño, and garlic. Sauté until onion translucent, stir often (~5 minutes).
  4.  Add salt, tomato paste, cumin and paprika, turmeric cook for another minute, stirring occasionally.
  5. Add diced tomatoes and cilantro, reduce cooking, let simmer for another 1-2 minutes.
  6. Taste mixture, may need to add additional seasoning.
  7. Remove pan from heat. Transfer vegetable mixture to a 9 inch glass or ceramic dish.
  8. Create lightly packed areas evenly throughout the mixture to place eggs to prevent them from separate them.
  9. Top with four to six cracked eggs and place pan in the oven.
  10. Distribute small spoonfuls of cream cheese throughout the dish.
  11.  Cook for 15-25 minutes or until eggs are fully cooked. The egg whites will be opaque white and the yolks have risen.
  12.  Top with additional fresh cilantro if desired and feta crumbles.
  13. Highly recommend serving with toasted sourdough or pita bread to soak up the deliciousness.

Not into spices? Try cracking eggs over roasted veggies with a little cheese and fresh herbs. It’s a simple meal and can be made with ingredients you have on hand. Get creative!

  • Limit: Sugar-sweetened beverages, added sugars, processed meat, refined grains, refined oils and other highly processed foods.

Another amazing thing about the Mediterranean diet is the fact that it includes flavors from natural ingredients. Lots of garlic, onion, citrus, fresh herbs, and spices!

Many herbs and spices not only provide flavor but also are packed full of antioxidants. A little bit goes a long way!

I love adding turmeric to my eggs! It’s visually beautifully and adds a little extra peppery taste.
