Healthy Steak Gorgonzola Zoodles

Ingredients:

  • 1 lb Steak
  • 2 tsp Steak Seasoning
  • Steak Marinade (we use Italian Dressing)
  • 2 Cups Pasta, Cooked (optional)
  • 4-6 Zucchini, Spirialized 
  • 1 tsp Olive Oil
  • 1 tsp Pepper
  • Pinch of Salt
  • 2 Tbsp Olive Oil
  • 2 Garlic Cloves, Minced
  • 1 Avocado, Mashed
  • 1 Cup Nut Milk
  • ¾ freshly grated Parmesan Cheese (can do less)
  • ½ Cup Cilantro, Chopped
  • ¾ Cup Spinach, Chopped
  • 1 Cup Roasted Tomatoes
  • 1 tsp Pepper
  • 1/4 Cup Gorgonzola

Directions:

  1. Refrigerate and marinate steak overnight in your choice of marinade (we used Italian dressing).
  2. Cook pasta as directed (~4 ounces, uncooked), set aside.
  3. Preheat grill at 300 F. In large glass pan lay steaks and apply steak seasoning. Place steaks on grill. Cook 10-15 mins or until desired doneness
  4. Mash avocado in medium bowl and add milk, cheese, mix together throughly.
  5. Add olive oil and minced garlic to medium sized sauté pan and cook for 2-3 minutes on medium high.
  6. Add avocado sauce mixture cook for 3 minutes.
  7. Add spinach, roasted tomatoes and basil to pan. Cook another 5-10 minutes and reduce to simmer. Let sauce sit.
  8. Spiralize zucchini or use frozen spiralized zucchini, add to a separate large sauté pan and cook on medium heat. Add salt and pepper if desired.
  9. Cook zoodles until at desired texture.
  10. Drain water from pan.
  11. Add sauce, pasta and steak to zoodles!
  12. Top with gorgonzola and enjoy!

Healthy Steak Gorgonzola Zoodles

Don’t knock this version of healthy steak gorgonzola zoodles, before you try it! Alright, real talk. I was a server at Olive Garden through grad school (judge me, whatever). Anyways, I loved the steak gorgonzola pasta, which is basically the richest, creamiest pasta dish on earth. Heaven. However, often times I craved veggies after eating it and wanted to make it a fun at home weeknight recipe!

THIS RECIPE IS AMAZING. I replaced pasta with zoodles because lord knows this meal needed some vegetables and adding some heart healthy fat to the sauce helped this dish out a lot. You will be weirded out by adding mashed avocado to a hot pan but trust me. DO IT.

Steak Gorgonzola Zoodles Nutrition Info:

Zoodles: A medium zucchini provides about 30 calories, 6 grams of total carbohydrates and 2 grams of fiber, which works out to only 4 grams of net carbs. By comparison, a 2-cup serving of wheat pasta contains approximately 90 grams of carbohydrates.

Avocado: 1/3 of a medium avocado has about 80 calories and contributes nearly 20 vitamins and minerals, making it a great nutrient-dense food choice! Avocado adds rich and creamy dimension to the sauce.

Spinach: is an extremely nutrient-rich vegetable. It contains high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron and calcium.

Tomato: Tomatoes are a good source of several vitamins and minerals, such as vitamin C, potassium, vitamin K and folate.
