Homemade Spaghetti Sauce and Zoodles

Ingredients:

  • 1 tsp olive oil
  • 1 lb ground meat of choice
  • 1 tbsp fennel seed (optional)
 
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • ½ red onion, minced
  • ¼ cup green onion (white part), chopped
  • 4 large tomatoes, peeled and chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh chives (green part), chopped
  • 1 tbsp sugar
  • 1 tbsp thyme
  • salt and pepper to taste
  • 4 zucchinis, spirialized
  • 2 Tbsp olive oil
  • Salt and Pepper
  • Topping: ½ Cup Fresh Parmesan, shredded (optional)

Directions:

  1. In a large pan, add 1 tsp olive oil and cook ground meat on medium heat until browned. Add fennel seed and mix together.
  2. In separate pan, heat olive oil in a large skillet on medium heat. Add minced garlic, onion, and green onions (white part). Cook and stir until onion is translucent, about 5 minutes.
  3. Next, add peeled chopped tomatoes, parsley, basil, chives, sugar, thyme, salt and pepper.
  4. Bring to a boil and stir together. Add in meat. Reduce heat and simmer, stirring occasionally, until sauce thickens, 15-20 minutes.
  5. On medium heat, in another separate large pan, add 3 tbsp of olive oil and zoodles (can spirialize fresh or use store bought fresh or frozen). Cook 10-15 minutes or until soft.  Season with salt and pepper.
  6. Add meat sauce to zoodles and serve. Sprinkle freshly grated parmesan on top!

I was feeling ambitious after a trip to Italy and decided to do homemade spaghetti sauce and zoodles recipe as a fun healthy date night dinner.

It’s a great way to use fresh garden or farmer’s market tomatoes during summer, I even know people who can their own spaghetti sauce. Don’t feel like you have to make homemade sauce for this recipe but it didn’t take me as long as I expected! Put on some Italian dinner party music (our echo has a great playlist), pour yourself a glass of red wine and have fun with making your own sauce. I highly recommend adding the fresh parmesan on top of the homemade spaghetti sauce and zoodles.


If it’s a weeknight…no shame in using a premade spaghetti sauce. I personally like Trader Giotto’s Tomato Basil Sauce or Rao’s Homemade Marinara.

Tomatoes: Tomatoes are a good source of several vitamins and minerals, such as vitamin C, potassium, vitamin K, and folate. Consumption of tomatoes and tomato-based products has been linked to improved skin health and a lower risk of heart disease and cancer.

Zucchini: Zucchini is rich in water and fiber, two compounds which can promote healthy digestion by reducing your risk of constipation and symptoms of various gut disorders.

Lean Ground Meat: Depending on what kind you chose the fat content may vary. The protein from ground meat promotes muscle growth and maintenance along with many other body functions. Meat is an excellent source of various vitamins and minerals. These include vitamin B12, zinc, selenium, iron, niacin, and vitamin B6.
