Thai Burgers with Pineapple and Peanut Sauce Coleslaw

Ingredients:

  • 1 lb ground moose or meat of choice
  • ½ cup carrots, shredded
  • 1/4 cup chopped cilantro
  • 2 green onion, chopped
  • 1 Tbsp garlic chili paste
  • 2 cloves garlic, minced
  • 1 Tbsp fresh ginger, minced
  • ½ Tbsp olive oil if needed
  • 3/4 cup peanut butter (heated)
  • 1/2 cup water
  • 1 Tbsp soy sauce
  • 1/2 Tbsp fresh ginger, minced
  • ½ Tbsp hoisin sauce
  • 1 Tbsp brown sugar
  • 1 Tbsp garlic, minced
  • 1 tsp rice vinegar
  • 1 bag cabbage or small head of cabbage (approx 4 cups)
  • 1 cup carrots, shredded
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 3/4 cup of peanut sauce (or more if desired)
  • 1 Tbsp sesame oil
  • 1 Tbsp lime juice
  • 1 Tbsp rice vinegar
  • 1 tsp sriracha

Directions:

Thai Burgers
  1. In a bowl combine ground meat, shredded carrots, cilantro, green onion, garlic chili paste, garlic and ginger.  Mix together thoroughly. I use rubber gloves and mix together with my hands.
  2. Divide into 4 patties. Turn grill to medium high heat cook until desired doneness
Peanut Sauce
  1. Combine warmed peanut butter (put in microwave for 10-20 seconds), water, soy sauce, ginger, brown sugar, minced garlic, hoisin and vinegar in a bowl, stirring with a whisk until smooth.
Grilled Pineapple and Sweet Potatoes
  1. Preheat grill to 350-400 degrees.
  2. Cut rind off of pineapple and core out.
  3. Slice sweet potatoes in wedges and onions into thin circles.
  4. Place pineapple, sweet potatoes and onions on to grill.
  5. Grill each side of pineapples and onions 2-3 minutes and sweet potatoes 15-20 minutes.
Healthy Coleslaw
  1. Add cabbage, carrots, green onions, cilantro, peanut sauce, sesame oil, lime juice, rice vinegar and sriracha.
  2. Mix together thoroughly and serve.

Wild game including moose typically has less fat compared to beef depending how the ground meat is processed. It’s protein packed and a great lean option!

Pineapple: have tons of fiber, vitamins and minerals. They are especially rich in vitamin C and manganese. Vitamin C helps with iron absorption which red meat contains a lot of.

Sweet Potatoes: are an excellent source of beta carotene, vitamin C, and potassium. These sweet potato wedges and amazing option for fries and add a lot of color to the plate.

Carrots: carrots are a great source of vitamins and minerals, mostly known for their beta carotene which is great for vision and your immune system.

Pineapple: Pineapples are high in vitamin C and manganese. It’s so juicy and sweet! A few minutes on the grill enhances the flavor a ton.

Cabbage: low-calorie vegetable that is rich in vitamins, minerals and antioxidants. It’s high fiber and adds a delicious crunch to the burgers.
