Easy Cajun Shrimp Foil Packet With Rice

Ingredients:

  • 1 Cup Rice, Cooked
  • 2 Tbsp Butter
  • 8 oz Shrimp
  • 1 Tbsp Cajun Seasoning
  • 2 Tbsp Olive Oil
  • 1 Zucchini, Sliced
  • 1 Bunch of Asparagus, Chopped
  • 2 Ears of Corn
  • ¼ cup Chives
  • 1 Clove Garlic, Minced
  • Cajun Seasoning, Salt and Pepper to Taste

Directions:

  1. Cook rice on stove top according to directions or use 90 second microwavable rice option.
  2. Preheat grill on high heat.
  3. Toss shrimp in bowl with 1 Tbsp olive oil and 1 Tbsp of Cajun seasoning, until coated.
  4. Chop vegetables, remove corn kernels from cob and mince chives and garlic.
  5. In large sheet of foil add additional 1 Tbsp olive oil and all sliced vegetables, corn, chives and garlic.
  6. Add additional Cajun seasoning, salt and pepper as desired.
  7. Wrap up ingredients having it completely covered by foil.
  8. Seal the foil packet closed and grill on 425º F for 12-15 minutes.
  9. Serve over buttery rice and enjoy!

Cajun Shrimp Foil Packet

Need more seafood in your life? Try this simple cajun shrimp foil packet meal. This recipe is an easy clean up with all the flavor! Fresh caught shrimp and summer vegetables are always win at our house!

We caught these shrimp in Whitter, Alaska and omg they were good! I’ll be honest I did not love twisting off their heads but I do love knowing where my protein comes from. There is nothing like fresh shrimp coming right from the Prince William Sound.

Shrimp and veggies wrapped in foil doesn’t get much easier  and there’s no mess! This recipe is fool proof, even if you have zero grilling skills.

 

Foil packet meals are a great option for camping trips too! This shrimp recipe provides a well-balanced meal in only 15-20 minutes without a mess. It’s easy to make over a campfire or during a busy weeknight where the last thing you want to do is a load of dishes.

Pro Tip: Freeze all of the shrimp tails and peelings vs. putting them in the trash to prevent any stinky smells.

Shrimp Foil Packet Nutrition Info:

Shrimp: Shrimp is a high source of animal protein. Shrimp also provides heart-healthy EPA and DHA omega-3 fatty acids. Shrimp does provide cholesterol, but very little fat and saturated fat. In 2015, the nutrition experts who develop USDA Dietary Guidelines removed the specific limit for cholesterol.

Zucchini: High source of potassium and Vitamin C!

Asparagus: High in Vitamin K and Folate! It even has 2 grams of protein per serving.

Corn: has a sad reputation of proving empty calories but I am here to tell you it’s high in fiber, is a slow digesting carb (keeping you full) and has antioxidants!
