Cucumber Onion Vinegar Salad

12 Servings


  • 1 red onion, sliced
  • 4 large cucumbers, sliced
  • 2 zucchinis, sliced
  • 1 cup white vinegar
  • ¼ cup sugar (or more to taste)
  • 1/2cup water
  • 1 teaspoon salt
  • ¼ cup fresh dill
  • 1 can garbanzo beans (optional)
  • 2 cup cherry tomatoes (optional)


  1. Slice cucumbers and zucchinis into thin slices. Peel if desired.
  2. Cut onion in half and then into very thin slices.
  3. Combine onions, cucumbers, and zucchini in a large bowl.
  4. In a separate, medium-sized bowl, combine remaining ingredients.
  5. Stir until sugar and salt dissolves.
  6. Pour vinegar mixture over cucumbers, onions, and zucchini.
  7. Stir until the veggies are evenly coated in marinade.
  8. Refrigerate for 15-30 minutes.
  9. Before serving, drain liquid and place in a serving bowl to serve.

Cucumber onion vinegar salad is a light, refreshing summer side dish. This salad is one of my favorite ways to incorporate vegetables as a healthy crunchy snack with fresh farmer’s market cucumbers.


Anyone else get bored of the same veggie snacks? Add a little vinegar and dill, and voila you’ve got a jazzed up healthy snack without having to overdo it with the ranch dip. If you have cucumbers and zucchinis give this cucumber onion vinegar salad recipe a try.

Cucumber Onion Vinegar Salad Nutrition Info:

Cucumber: Cucumber is actually a fruit. It’s hydrating, packed with soluble fiber, and contains vitamins and minerals. It’s refreshing and a great vegetable to include in your diet.

Zucchini: Zucchini contains antioxidants and also rich in soluble fiber and water. It contains potassium and vitamin A.

Dill: Fresh dill is low in calories, yet a good source of many essential nutrients, including vitamin C, magnesium, and vitamin A.  It’s often paired with salmon, potatoes, cucumbers, and yogurt sauces.

Vinegar: The acidity or sourness of vinegar brightens the flavor of food and adds balance to a rich dish. There are several types of vinegars available. Specialty vinegars may have added herbs like basil, clove, or cinnamon, or are sweetened with fruit juices.
