Creamy Sun-Dried Tomato Salmon Pasta

Ingredients:

  • 1 large salmon filet
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 2 Tbsp butter
  • 1 yellow onion, chopped 
  • 4-6 cloves of garlic, minced
  • 7 ounces of sun-dried tomatoes, sliced
  • 1/3 cup white wine
  • 2 cups half and half
  • 4 cups spinach
  • 4 cups pasta of choice, cooked
  • 1/2 cup parsley
  • red pepper flakes, paprika to taste

Directions:

  1. Pull pin bones of thawed salmon, filet meat off of the salmon skin, cut into 1 inch wide strips, lightly coat in 1-2 Tbsp olive oil and season with salt and pepper.
  2. In a cast iron skillet, heat up the remaining olive oil on medium heat. Distribute salmon evenly throughout the pan, sear for 4 to 5 minutes or until no longer transparent and flaky. Remove salmon and set aside side.
  3. Add 2 Tbsp of butter to the skillet on medium heat, once it’s melted add onions and cook for 1-2 minutes or until translucent. Add in minced garlic, cook for 1 minute or until fragrant. Add in sun-dried tomatoes and cook 1-2 minutes. Add in white wine and cook 2-3 minutes.
  4.  Add in half and half, bring to a boil and reduce to a simmer. Allow to simmer for 4 minutes before adding spinach. When spinach has wilted, add in salmon.
  5. Cook pasta according to directions and drain.
  6. Just prior to serving stir in and garnish with parsley, red pepper flakes and paprika.

Creamy Sun-Dried Tomato Salmon Pasta

This tuscan style creamy sun-dried tomato salmon pasta is one of our new favorite recipes! What’s not to love about this creamy delicious pasta recipe with flavorful veggies and salmon? Fresh spinach and sun-dried tomatoes are a perfect combination.


I love pasta and like to have it on hand throughout busy work weeks. Being able to cook this meal in under 30 minutes makes it a win in my book. This creamy salmon pasta dish tastes like I am eating a meal from a restaurant! Plus if you have spinach sitting the fridge waiting to be used and sundries tomatoes and pasta in the pantry already, it’s a great way to use up foods on hand. Making extra for leftover lunches is also a great strategy and can be stored for 2-3 days after cooking.

Salmon:  Salmon is high in omega 3’s and a good source of protein. It’s also one of the best sources of vitamin B12. Salmon also contains potassium and other nutrients like iron and vitamin D. Check out my blog for more information on wild-caught vs. farmed salmon. 

Spinach: Dark, leafy greens, such as spinach, are beneficial for skin, hair, and bone health. They also provide protein, iron, vitamins, and minerals.

Sun-Dried Tomato: Sun dried tomatoes are rich in vitamins, minerals, and antioxidants. They have a particularly high concentration of lycopene, a powerful antioxidant. They are flavored packed and complete the cream sauce!

Whole Grain Pasta: Whole-wheat pasta is an easy-to-find nutritious noodle that will bump up the nutrition of your pasta dish. Made from whole grains, about a cup of cooked pasta adds 3 grams of fiber and 8 grams of protein per serving.
