Banana Chocolate Chip Oatmeal Cookies

  1. Preheat oven to 350°.
  2. Add banana, both sugars, butter and vanilla to mixing bowl. Mix ingredients or use stand mixer on medium speed.
  3. Stir in egg and vanilla.
  4. Combine oats, flour, baking soda, cinnamon salt and chocolate chips in a medium bowl.
  5. Add dry ingredients to the mixture.
  6. Scoop 1 inch by 1 inch of cookie dough and place evenly on baking sheet.
  7. Bake for 10-12 minutes or until golden brown and set.

These Banana Chocolate Chip Oatmeal Cookies are what started my “healthyish baking” obsession.

In high school, I was over-consuming Toll House cookie dough as an afternoon snack and found myself baking cookies once a week for social events or every time I had friends over. It was a little out of control. What sparked the “healthyish” idea was running out of sugar one day and not wanting to drive to the store. I googled what I could replace it with and bananas popped up! Why hadn’t I tried this before?!

I then added the oats and whole grain flour a couple batches later and loved the hearty texture. These cookies are much more satisfying and have some added nutritional benefits when compared to the pre-made cookie dough roll.

Bananas: are rich in fiber, antioxidants and several nutrients including potassium and magnesium. Bananas are a great sugar alternative for baking or a way to reduce processed sugar.

Oats: are rich in carbs and fiber, but also higher in protein and fat than most other grains. Oats are high in many vitamins and minerals including thiamin, manganese, iron, phosphorus and more.

Whole Wheat White Flour: great alternative to refined white flour because it has a much higher fiber content. Whole wheat white flour is still whole wheat flour, but it has a lighter color and lighter flavor that might be preferred in certain dishes and baking.
